Super Gooey Marzipan Muffins

I don’t know about you, but the first time I ever experienced marzipan, I was in love!! Marzipan is ground almonds and sugar- and let me tell you THEY BELONG TOGERTHER!!! Here is a fun rendition of marzipan in muffin form.  These could be a quick breakfast with a side of berries or a tasty dessert/birthday celebration!

They are truly DEVINE.




2 1/2 C fine almond flour

1/4 C butter-melted

1/4 C plain yogurt

1/2 C coconut oil

2 eggs

1/2 C honey

3 servings stevia

2 t almond extract, 1 t vanilla extract

1/2 t real salt

1/2 t baking soda

optional: add in 1/2 C dried cherries or cranberries at the end


  1. In food processor or kitchen aid, blend all ingredients together.

  2. Line muffin tin with liners and fill about 1/2 full with batter.

  3. Bake on 375 degrees for 15-20 minutes until golden brown and getting firmer (don’t have to be completely firm, they are really good when moist and gooey!)
