2 cans coconut milk (cream)
½ C cacoa/cocoa powder (less if you want it ‘milk-chocolate’, rather than dark-chocolate)
½ C unsweetened peanut butter
¼ C honey
1 T vanilla extract
¼ tsp powder stevia (or 1 serving in liquid stevia, or more honey to taste)
½ C chopped walnuts/pecans
¾ C shredded unsweetened coconut
½ C homemade chocolate drops
- Blend ingredients (besides last 3 ingredients) in blender until smooth.
- Process in ice cream maker for allotted time (mine takes about 20 minutes). (you can simply freeze this if you don’t have an ice cream maker)
- Add nuts, coconut, chocolate chips into the maker the last couple of minutes.
- Serve immediately after for soft-serve texture, put in freezer for a couple of hours for a hard ice cream texture.
