Nut Butter Avocado Pancakes- Stage 3 GAPS

 

½ ripe avocado

¼- ½ C almond butter

4 eggs

1 t salt

Ghee, coconut oil, or butter

 

 

  1. Mix all ingredients in food processor until consistency is good to spread as a pancake.
  2. Melt fat in cast-iron frying pan. Spread mixture to form small pancakes.
  3. Cook for a few minutes on each side until slightly golden brown.

 

Makes 6-8 small pancakes, could easily double. These could be used as a sandwich with chicken or tuna inside.
