½ ripe avocado
¼- ½ C almond butter
1 t salt
Ghee, coconut oil, or butter
- Mix all ingredients in food processor until consistency is good to spread as a pancake.
- Melt fat in cast-iron frying pan. Spread mixture to form small pancakes.
- Cook for a few minutes on each side until slightly golden brown.
Makes 6-8 small pancakes, could easily double.
