1 C assorted nuts/seeds (I did walnuts, sunflower, pecans, almonds)
1/3 C dried raisins/cherries
2 t vanilla extract
2 t honey (or to taste)
¼ C shredded coconut
- Combine coconut butter, vanilla and honey in food processor to make a paste.
- Add dried fruit and nuts, process until small chunks of dried fruit are still seen. (If it’s not wet enough to roll together, add more coconut butter or oil.)
- Roll into quarter-width balls, and roll gently in shredded coconut.
- Keep in fridge or freezer. Tastiest when cold.
Makes about 30 truffles.
